LUNCH

  • Salad with honey-roasted root vegetables – crumbled blue cheese & spinach

  • Bouillabaisse – boiled potatoes, rouille, garlic sticks

DINNER

  • Tuna tataki – gochujang mayonnaise, ginger, mung bean sprouts, herb salad

  • Venison sirloin – Jerusalem artichoke sauce, potato & blackcurrant purée, fried salsify, beetroot & kale

  • Onion & cabbage soup – beef & red wine broth, buttered white cabbage, Västerbotten cheese croquette, fried parsley

  • Arctic char – mussel & herb sauce, baked fennel, roasted root vegetables & herbs

  • Lingonberry mousse – cardamom cake, lingonberries, vanilla & cardamom syrup

WEDNESDAY
